Ingredients for baking ribs

  • 800 grams of fresh pork ribs (or 4 racks)
  • 1 tablespoon coarse salt table
  • 2 tablespoons vegetable oil table
  • 4 fresh parsley stalks
  • 4 sprigs fresh thyme
  • 4 cloves garlic, crushed

Ingredients for the sauce:

  • ½ cup balsamic vinegar
  • ¾ cups ketchup
  • 6 teabags of Four O'Clock Licorice Spice Herbal Tea infused for 20 minutes in 200 ml of beer
  • ¼ cup liquid honey
  • 1/2 tablespoon of molasses
  • 3 tablespoons grainy mustard table
  • 1 ½ teaspoon Worcestershire sauce
  • 1 teaspoon of tabasco
  • ¼ cup brown sugar
  • ½ chopped red onion
  • 2 minced garlic cloves
  • Salt to taste
  • 4 teabags infused for 24 hours in 1/3 cup of Bourbon
1 - Put 4 sheets of aluminum foil on a flat surface and place each on a portion of ribs (1 rack of about 200 grams). Season the ribs on both sides with oil, salt and garlic, parsley and thyme. Reseal the foil on the ribs and place them in a large plate. Bake at 400 C for 30 minutes then reduce temperature to 250C: cook for about 1 ½ hours.
2 - Meanwhile prepare the sauce: in a heavy bottomed pot heat and reduce the balsamic vinegar by half, then add infused beer (keeping the tea bags in the mixture) then add all other ingredients except the Bourbon. Cook over medium heat for 30-40 minutes or until thicker consistency then remove the 6 teabags. Remove from heat and add the infused Bourbon (without bags).
3 - Remove the cooked ribs from aluminum foil and let cool a few minutes. Brush each side of the ribs with sauce and place on a parchment paper on a baking sheet: bake at 400C and cook for about 3-4 minutes on each side. If necessary brush again the ribs during the last firing. Remove from oven and serve immediately garnished with lemon wedges and oranges and a little chopped fresh cilantro. Serve with the remaining sauce in a saucier.
