Sweet Cinnamon Tea Loaf with Maple Pecan Crumble

Ingredients

For the Cake Batter:

  • 1 cup almond or oat milk
  • 2 tea bags of Four O’Clock Sweet Cinnamon Herbal Tea
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 cup melted coconut oil
  • 1/2 cup maple syrup
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract

For the Crumble:

  • 2 tbsp all-purpose flour
  • 1 tbsp maple syrup
  • 1/2 cup Taylored Maple Pecan Pie Granola (or 1 cap full)
  • 2 tbsp melted coconut oil
  • 1 tea bags of Four O’Clock Sweet Cinnamon Herbal Tea (empty the loose tea leaves)

 

Preparation: 

  1. Prep the Pan & Oven:
    Preheat the oven to 350°F (175°C) and line a loaf pan with parchment paper.
  2. Steep the Tea:
    Heat the almond or oat milk at medium-low heat, add 2 Four O’Clock Sweet Cinnamon tea bags into the milk. Let steep for 10 minutes, then remove the tea bags.
  3. Make the Batter:
    In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Add the steeped tea mixture, eggs, melted coconut oil, maple syrup, and vanilla extract. Mix until smooth and well combined. Pour the batter into the prepared loaf pan.
  4. Prepare the Crumble:
    In a small bowl, mix the flour, maple syrup, granola, softened coconut oil, and the lose tea leaves from 1 Four O’Clock Sweet Cinnamon tea bag until the mixture forms a sandy, crumbly texture.
  5. Assemble and Bake:
    Sprinkle the crumble evenly over the batter. Bake for 35-42 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Serve:
    Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing. Enjoy!
