"Espresso and tonic is a massively underrated duo, especially on a hot summer day. We take that concept and give a spirited twist by highlighting a playful flavour from Four O’Clock® Espresso Chai. "

Preparation:

For the Espresso chai cordial:

  1. Combine all ingredients in a pot and heat over medium heat for 10 minutes, stirring occasionally to dissolve the sugar completely.

  2. Remove from heat and strain out the tea bags and allow the mixture to cool.

  3. Once the mixture is at room temperature, stir in the lemon juice and transfer to a bottle or container. Refrigerate until ready to use. (Makes enough for approximately 15 drinks).

For the Cocktail:

  1. Fill a highball glass with ice, pour in the espresso chai cordial and Cynar (or Stega) liqueur.

  2. Top off with tonic water and stir gently to combine.

  3. Garnish with a slice of lemon and enjoy!
