Not the absence of doing something, but really truly doing nothing. Your phone is on Do Not Disturb, but you left it in the kitchen anyway. A string of old movies plays in the background and you flip between reading your book and napping. There are no meals today, only snacks. Nothing is going to be accomplished and that in itself is

Four O’Clock®’s Pumpkin Spice Rooibos tea is going to impart that perfect blend of baking spices to compliment our pumpkin puree and making a syrup with it is super easy! What I love about this cocktail is that it’s so easy to forget there’s no alcohol in it. It’s refreshing, whimsical, and extremely crushable.

 

Pumpkin can get a bad rap sometimes. Most people just think of Pumpkin Pie which can be pretty dichotomous and I think the biggest hurdle for people is assuming that pumpkin is this thick, heavy, rich profile. That’s why I love pairing it with lemon which is going to bring such an electric brightness that showcases pumpkin in am entirely new way. This mocktail is designed in the style of a fizz which should have both effervescent and silky texture qualities. We accomplish this by using aquafaba and soda water. The aquafaba (the liquid found in cans of chickpeas) will give us that desirable silky smooth consistency while the soda will lend its bubbles to lean everything out and make it refreshing. If I had one piece of advice for making fizzes, it would be to let the cocktail sit for a minute or two before topping with your soda, this allows the aquafaba to settle and help keep its structure.
