RAINY DAY FIZZ MOCKTAIL with Pumpkin Spice Rooibos

Pairs well with: roasted butternut squash, lemon chiffon cake, cozy movies

Ingredients:

  • 30 ml (1 oz) Four O’Clock® Pumpkin Spice syrup
  • 45 ml (1.5 oz) Pumpkin puree
  • 45 ml (1.5 oz) Freshly squeezed lemon juice
  • 30 ml (1 oz) Aquafaba
  • 60 ml (2 oz) Soda water (to top) 

Makes 1 portion

 *Makes enough for 10 drinks

"Pumpkin can get a bad rap sometimes. Most people just think of Pumpkin Pie which can be pretty dichotomous and I think the biggest hurdle for people is assuming that pumpkin is this thick, heavy, rich profile. " 

Preparation:

  1. To prepare the syrup, bring water to a boil and steep 2 Four O'Clock® Pumpkin Spice tea bags. Add the sugar and heat over medium heat for 10 minutes, stirring until sugar dissolves.  Remove from heat, discard the tea bags and refrigerate. (Makes approximately enough for 10 drinks).                 
  2. In a cocktail shaker, combine all ingredients except for the soda water. Shake the mixture vigorously without ice to froth the aquafaba.  Add ice to the shaker and shake again until well chilled.                                                  
  3. Strain the cocktail into a Collins glass and let it sit for at least a minute to allow the aquafaba to stabilize.                                                                        
  4. Top the cocktail with soda water. Garnish with a sprinkle of pumpkin spice on top and enjoy!
